Eldridge—Also Known as ‘Fuzhou Street’
In case you’re, like, totally out of touch, Fujianese food is the all the rage these days.
Here’s what you need to know:
It’s not from Fiji.
Fuzhou (pronounced Foochow) is a city in the Fujian province, which is on the southeast coast of the People's Republic of China.
For a little taste of Fuzhou (mostly in the form of freshly made dumplings, noodles, and fish balls), take a stroll down Eldridge Street, starting where it splits off Division.

The pork-and-chive dumplings at Fu Zhou Cuisine are smooth and slippery and damn tasty.

The making of the dumplings at another restaurant called Fu Zhou Cuisine. The filling is nearly equal parts pork-to-chive, which gives these babies a little sweetness and a light consistency.

We made friends with a guy who got the cooks to give us a dumpling/fish ball soup combo, which is not actually on the menu. It cost $3. Always talk to strangers.
