Chef Switch At Bussaco

Park Slope's Bussaco (833 Union Street, Brooklyn) has only been open a few months and already there's a chef change, apparently because of some disagreements over brussels-sprouts leaves versus whole brussels sprouts.
Chef Matthew Schaefer was replaced by Bussaco sous chef Kevin Adey a few weeks ago. Both are Le Bernardin alums. Bussaco owner Scott Carney said he decided to replace Schaefer because they "had a hard time agreeing on how to morph the menu in a way that would answer some of the needs of the neighborhood.... He was sort of a purist, a little more artistic: He was using brussels-sprout leaves, whereas I wanted to use whole brussels sprouts. I wish him well, and hope that we'll survive his departure, too." Carney says the menu will gradually change with Adey heading the kitchen.
