Is Your Meat In Season?

The Atlantic Food Channel has an interesting piece on the seasonality of meat. Most of the animals we eat graze on pasture, and so it makes sense that grass--like other vegetation--should peak at a certain time of the year and that, in turn, whatever is eating that grass should also peak while the eating's good. This is an excellent argument for having a slaughtering and butchering season. But a meat-eating season? This concept is obsolete in these, our refrigerated times. Besides, would Bill and Nicolette Niman of Niman Ranch, who penned the piece, really want people to only buy their meat when it's in season? Seems like it would make for a pretty lean other nine months of the year. But maybe, being the meat lovers that we are, we just can't bear the idea of going an entire season without it.
