What to 'B' to a New Nolita Joint Flying Liquor License-less for the Moment

Every week or so in 'What to B When You BYOB' we ask a local wine shop to recommend a few good wines under $20 to pair with the food at a nearby BYOB restaurant.

This week, we talk to Maya Pedersen and Jean-Baptiste Humbert of Wine Therapy in Nolita about what to bring to a nearby recently opened Italian restaurant that has yet to receive its liquor license and so technically isn't supposed to be touting itself as a BYOB.


Italo Pietrantonj Montepulciano D'Abruzzo 2006, Italy ($14.99)
This smooth and fresh medium-bodied red is casual and easy going, says Jean-Baptiste. It drinks well with crudo, salami, cheeses and other finger foods.

Salike Vermentino di Sardegna DOC 2007, Italy ($16.99)

"The Salike is delicious," says Maya. "It's full of honey and melon, but it's still dry. And a little weighty." She suggests pairing it with polenta.

Feudo Montoni G Grillo 2007, Sicilia, Italy ($15.99)
"This one is mineral and dry, but also fresh and almost briny," according to Maya, who adds that it will complement oily anchovies without overpowering delicate things like squash blossoms.

Odoardi Savuto 2004, Calabria, Italy ($18.99)

"I've actually never heard of any of these crazy Calabrian grapes," says Maya, a certified sommelier, of Gaglioppo, Greco Nero and Nerello Capuccio, which make up this red blend. "It's a bigger, fuller wine. It's smoky and wild. It'll go great with the roasted lamb."
