How Do You Spell G-U-T-B-O-M-B?--Quesadillas at Brooklyn Flea

Thwap! Thwap! Thwap! is the sound of masa being kneeded and then pounded into outsize pancakes, which form the wrapper for Pueblan quesadillas, currently available on Saturdays at the Brooklyn Flea, made by former Red Hook vendors.

These quesadillas are nothing like bar-food quesadillas--they're more like giant tacos. Into them is dumped an astonishing quantity of ingredients, including meat of your choice (we selected the dried-beef cecina, but grilled steak, chicken, and a vegetarian mixture are also available), raw onions, crema, crumbled queso seco, tomatoes, lettuce, and a further choice of three salsas: green tomatillo-and-chile, a red emulsified chile sauce, and a chunky chipotle. With difficulty can a single person finish this $6 treat. Arrive early (say, 11 a.m.), and you won't have to stand in a half-hour line in the hot sun. Every Saturday at the Brooklyn Flea, an outdoor market at Vanderbilt and Lafayette.
