Says Marlow & Daughters' Butcher Extraordinaire Tom Mylan: "I'm Quitting!"

First came word that Bonita, Andrew Tarlow and Mark Firth's Mexican joint in Williamsburg, was closing. Then, the founding chef of the Diner/Marlow & Sons family, Caroline Fidanza, announced she was leaving to start her own restaurant. Now, cult butcher Tom Mylan reveals that he too is breaking away from the fold to start his own venture.

"I'm quitting!" Mylan said from his post manning the pit at 3rd Ward's second Annual Pig Roast & Dance Party this past Sunday. "I gave my notice two weeks ago. I'm moving on to start a new entity."

The butcher told Fork in the Road that he was opening a "multi-use space," but wouldn't divulge more than that at this point.

"I've been working for five years at Diner and Marlow & Sons... & Daughters. I've been editing the magazine, doing the cheese program. It's a long time to be in one place. I have nothing but positive feelings for everyone who works there and the owners. But I got an opportunity to do my own thing."

Brent Young, who works with Mylan at the Marlow & Sons establishments, is also taking his leave. The only other hint Mylan would offer: The new venture will be in Brooklyn, of course. Oh, and it will involve meat.
