Under the Toque: A Spanish Chef in the House at Mercat; Lady Chefs Gone Wild

Ryan Skeen--formerly of Resto, the General Greene, and Irving Mill--has officially been named the new executive chef at Allen & Delancey on the LES. Both chef Kyle Bailey and pastry chef Tiffany MacIsaac have left the restaurant. A new pastry chef has yet to be named.

Spanish chef Paco Guzman of Santa and Santa Maria restaurants in Barcelona is guest cheffing at Mercat through July 21. Daily specials such as marinated sardines with eggplant and Greek yogurt curry will be on offer.

Jon Shook and Vinny Dotolo of L.A.'s Animal will be operating a pop-up joint at Sole East in Montauk from August 12 to 18, selling dishes from the restaurant, such as the foie gras loco moco burger with quail egg and Spam, and poutine with oxtail gravy and Cheddar.

Six of the country's top female chefs, including April Bloomfield of the Spotted Pig and the John Dory and Anita Lo of Annisa, are in the wilds of outer Mongolia for a boar-hunting expedition.

Mr. Cutlets dispelled rumors that Jeffrey Chodorow and Rocco DiSpirito may open a new restaurant together. "Completely untrue!" says Chodorow. "As a matter of fact he texted me to warn me it was written in Grub." But you can still watch the pair together on DVD.
