Earlier this month, we learned
that a restaurant in Delray Beach, Fla., claimed it was making authentic New York bagels thanks to water treated to replicate the chemical components of Brooklyn tap water. According to a Serious Eats post
today, that restaurant -- aptly named the Brooklyn Water Bagel Co. -- actually lives up to patented 14-step treatment process. Its bagels, the rapturous reviewer writes, have "[t]hat crisp, hearty outer shell that Ed [Levine]
once told me was the mark of a "serious" bagel. The doughy, airy,
pocketed interior. The poppy seeds that jumped with a save-yourselves
attitude from my bagel as I tore into it with my teeth." Apparently the restaurant's owners are planning to grow into a chain. We're guessing it's only a matter of time until they'll try to sell bagels made with Brooklyn water in, well, Brooklyn.
