This Weekend, Chew Your Food Slowly on Governors Island
As part of the NY400 Pioneers of Change festival taking place on Governors Island this weekend, a group of Dutch artists have created the "Go Slow Cafe," where diners wear slippers, food portions are determined by how far they have traveled (i.e. a generous amount of mustard greens from Greenpoint's Rooftop Farm shares a plate with a single lychee from China), and everything is prepared and served by a staff of elderly -- and slow -- New Yorkers. Naturally, there are signs advising customers to chew their food slowly. Somewhere, Horace Fletcher is smiling. ![]()
