Make Vegetarian Beet Borscht With Brooklyn's Au Revoir Simone

One of my favorite bands, Au Revoir Simone, shows us how to make vegetarian roasted beet borscht in this clip from Nylon TV. Note their comments on factory farms and their use of cage-free eggs. The band was formed in 2003 in Williamsburg, and features three gals on synths: Erika Forster (vocals/keyboard), Annie Hart (vocals/keyboard), and Heather D'Angelo (vocals/drum machine/keyboard). They'll be playing a CMJ show at the Bell House this Saturday night. See you there! (Last time I checked, tickets were still available, click here.)

Many of their songs are downbeat love songs with lush harmonies, and several have memorable dreamy videos. In one of their best numbers, "Sad Song," they prepare for a birthday party by baking frosted cookies, making a mess of the kitchen. Then they do a sad little dance.
