Recipe: Make "Single Man" Streeter McClure's One Beer Chili

Streeter McClure's new cookbook, The Single Man's Guide to Cooking With Beer, includes 34 recipes that incorporate beer, as well as practical information on pairing beer with food.

"Beer isn't just for drinking anymore," said McClure in a statement. "Beer enthusiasts have become connoisseurs, and we're providing a way to take that interest to the next level."

McClure shares his recipe for One Beer Chili, which his mother used to make and which inspired the book. A portion of the proceeds will go to breast cancer research, in honor of his mother, whom he lost to the disease in 2005.


One Beer Chili

1 bottle Pilsner
2 lb ground beef
1 large white onion, chopped
1 (12 oz) can diced tomatoes
3 (7 oz) cans tomato sauce
1/2 cup chili powder
1 tsp cumin
1 tbsp salt
1 tsp pepper
1 dash cayenne pepper
1 can ranch-style beans

In a small pan over medium heat, brown the meat and onion. Cook the meat fully, then drain all grease and transfer to a crock pot. Add the remaining ingredients, as well as two cups of water, and cook for 2 hours. Adjust the flavor with salt, pepper, and other spices if desired. If it's too spicy, add 1-2 teaspoons of sugar. If it's not spicy enough, up the cayenne.
