Danny Meyer may be hard at work attempting worldwide Shake Shack domination, but that hasn't prevented him from focusing on more local and lofty endeavors like Maialino, his Roman-style trattoria that opens for dinner tomorrow evening. The restaurant, located in the Gramercy Park Hotel, will feature Nick Anderer as its executive chef. Anderer, who was formerly a sous-chef at Gramercy Tavern, will be turning out old-school Roman classics like braised artichokes and spaghettini alle vongole made with Greenmarket ingredients. The restaurant's name, by the way, means "suckling pig," and is a riff on Meyerlino, a nickname Meyer picked up when he lived in Rome. Meyer is undoubtedly hoping that the name will also translate to success, particularly given the somewhat ignominious fate of the restaurant's former occupant, Wakiya.
