We're smack in the middle of apple season (and baking season). Here, NPR's Guy Raz gets together with cookbook author Nancy Baggett to find out which apples best retain their flavor and texture when baked. Although Granny Smiths are often cited as good baking apples, Raz and Bagett find that those green fruits go mushy and flavorless in the oven. But which one bakes best?
