At Bluebird Coffee Shop, Big Fat Cookies and Counter Culture Coffee

The Bluebird Coffee Shop, which opened this past Saturday, is the newest tenant to try its luck in the original Tasting Room space on 1st Street.

Its predecessor, Simon Sips, closed earlier this fall not long after its namesake, Simon Mammon, departed the business. Bluebird isn't in any way affiliated with Simon Sips, but it does serve the same Counter Culture coffee and has a very similar spare aesthetic. It also has a line of big fat cookies, scones, and Irish soda bread made by a baker who used to work at Prune and is affiliated with Amy's Bread. Only time will tell how Bluebird will fare in what has proven a tricky location, but its pneumatic treats will undoubtedly help to sweeten the odds.
