The Festival of Lights begins tonight, bringing with it eight days of dreidels, gelt, and a celebration of all things fried. One of the sweetest ways to commemorate the miraculous supply of oil is sufganiyot, which are less formerly known as Hanukkah doughnuts. Ball-shaped and typically impregnated with jam or custard, they're eaten throughout Israel during the weeks leading up to Hanukkah. Angel Bakeries, Israel's largest bakery, reportedly deep-fries 250,000 of the things over the course of the holiday. Check out this clip showing how sufganiyot are made: It's oddly hypnotic, and may cause unsightly drooling.
