The possessor of a whole beast punch card, which comes in either pig or cow denominations, can stop by Dickson's anytime to redeem a section of the animal. The pig card yields cuts from the shoulder, loin, belly, and ham, with choices within those categories (for the pork belly, you can take home fresh belly, bacon, or pancetta). The cow card nets choices from each of eight sections: chuck, brisket, shank, plate, rib, short loin, sirloin, and round.

Just one question: If it's a whole beast, where's the offal?

The cow card goes for $150 and the pig for $100, which works out to about $10 a pound for the meat included with each card--not a bad deal when you consider that Dickson's meats are all locally raised, the animals have spent their entire lives on the farm (no feed-lots), and have never been administered hormones, prophylactic antibiotics, or animal by-products.
