Under the Toque: Table 8 Still Open Despite Govind Armstrong Departure; Laurent Manrique Eyes Country Space

Govind Armstrong may have left Table 8 in the Cooper Square Hotel, but the restaurant is still open. Chef de cuisine Willis Loughhead, formerly of Country, is now running the kitchen.

Laurent Manrique, an owner at Cafe de la Presse in San Francisco and formerly a chef at Aqua, is reportedly talking to Carlton Hotel owners about taking over the upstairs space at Country.

Christian Delouvrier, who worked for David Bouley until last June, is now the chef at Midtown's La Mangeoire.

What did chefs crave in 2009? Leah Cohen, formerly of Centro Vinoteca, said "Japanese, Thai or Vietnamese tempura, Maitake mushrooms or anything with uni." April Bloomfield of The Spotted Pig loves Twix. George Mendes of Aldea likes his own duck rice.
