Recipe: Make Chef Isaac Reyes's Pancakes With Banana Frita

Why save all your dancing for Saturday night when you can pack up the kids for a salsa-filled Sunday morning? Ideya's Salsa Baby Brunch takes place once a month, featuring the bilingual Jose Conde Band and a menu of Latin-flavored breakfast standards. Just in time for the next one, this Sunday, January 17, Chef Isaac Reyes shares his recipe for Pancakes with Banana Frita, which go perfectly with a Morir Sonando mocktail (orange-juice milkshake with cinnamon and sugar). Party on, baby.

Ideya's Pancakes with Banana Frita

1 1/2 cup flour
1/4 cup sugar
1/4 tsp baking powder
1/4 tsp baking soda
1 cup whole milk
2 small eggs
2 tbsp fresh-squeezed OJ
1/4 tsp vanilla extract
dash ground cinnamon
2 tbsp melted butter

In a mixing bow, combine all dry ingredients. In a separate bowl, combine all the wet ingredients. Combine the two mixtures, mixing well. Whisk until there are no lumps, being careful not to over-whisk. Drop 2 ounces of batter onto a hot buttered griddle. Cook for approximately 1 minute on each side, until golden. Serve topped with banana frita (recipe follows).


Banana Frita

3 ripe bananas
3 tbsp melted butter
cinnamon, for sprinkling
granulated sugar, for sprinkling

Slice the peeled bananas lengthwise. In a pan with the melted butter, saute the bananas for 1 minute on each side, until golden but not browned. Drain the bananas on paper towels to remove excess butter. Sprinkle with cinnamon sugar.
