Sam Talbot Will Sail the Sustainable Seas at the Mondrian Hotel

Sam Talbot will serve sustainable seafood, not beefcake, at the Mondrian Hotel.
Metromix stopped by the Pierre's Tibet Fund benefit last night, and came away with some choice quotes from some of the 10 chefs in attendance. Sam Talbot revealed his plans to use "fresh, seasonal, sustainable seafood" at his restaurant at Soho's Mondrian Hotel, which will open in September. Much of it will come from the Montauk fishermen he met during his tenure at the Surf Lodge, where he was churning out fried Montauk calamari and lobster salad sandwiches.

In other local news, Anita Lo is hoping that Annisa will reopen "within the next couple of weeks," though the restaurant still doesn't have a kitchen, and George Mendes' arroz de pato still looks really, really damn good.
