West Village mainstay One if by Land, Two if by Sea, has a new chef, its third in two years. Sam Freund, who took over from Craig Hopson a year and a half ago, has left the restaurant for a job in Denver. Andrew Matthews, who has been at OIBL for more than a year, is now at the helm.

Meanwhile, Marco Canora of Hearth appeared on this week's Platelist, where he discussed his partnership with Grieco and how he got into food in the first place.

Jason Atherton, who opened Maze outposts in New York, Cape Town, and Melbourne, is leaving the Gordon Ramsay group after falling out with Ramsay to start his own place.

Tom Colicchio was none too pleased with The Columbia Spectator's unfavorable review of Colicchio & Sons, or Gael Greene's and Grub Street's mentions of it.
