Make Marc Murphy's Curry Chicken Sandwich, Available in 'Landmarc in the Park' Picnic Baskets
As the weather turns balmy, Landmarc has started offering ready-to-go meals that come packed with a picnic blanket and frisbee for the perfect Central Park picnic. Landmarc in the Park lunches vary from simple sandwich meals for $15 to a lounge-in-the-grass box for $20-$25. Pick up your picnic at Landmarc in the Time Warner Center, with just 30 minutes' advance notice.

"We're right next door to Central Park, and in the summer it's one of my favorite places to hang out on my days off," says Murphy. "We came up with Landmarc in the Park because we wanted diners to be able to take full advantage of the park during those sunny summer New York days."
He shares his recipe for Curry Chicken Sandwich, which he claims is "perfect for packing" because it travels so well.
"I add a little cayenne pepper to the curried chicken salad for heat, and it works well with the sweetness of the golden raisins," he explains. "Diced Granny Smith apple brings a nice crunch to the salad."
Curry Chicken Sandwich
2 large chicken breasts
3 oz. aioli
1 tbsp curry powder
2 oz. golden raisins
1 Granny Smith apple, diced small
2 scallions, sliced thin
1/4 tsp cayenne pepper
1/2 oz. lime juice
1/2 oz. chopped cilantro
salt and pepper, to taste
4 Martin's potato hamburger rolls
Poach the chicken in 6 cups of salted water, a roughly chopped onion, and celery, for about 12 minutes until fully cooked, then allow it to cool down. In a bowl, combine the scallions, apple, and golden raisins. Add the aioli, curry powder, salt, pepper, cayenne, cilantro, and lime juice. Cut the chicken into cubes and toss it with the rest of the ingredients. Adjust the seasoning as needed before assembling the sandwiches. (The sandwich mix can be made a day ahead and refrigerated.)
