Making Motorino's Brussels Sprout and Pancetta Pizza

The brussels sprout and pancetta pie at Motorino is one of our favorite pizzas in the city. Yesterday, Slice posted a useful slideshow on how to make that pizza for yourself at home. You can substitute speck for the pancetta if you prefer; it's sometimes served that way at the restaurant.
