Cherries Are Here!

The cherry season, fleeting and sweet, is upon us.

Visits to greenmarkets this weekend yielded both sweet bing and tart sour cherries, at about $4 a pint.

Although they're probably best just popped in your mouth one after the other, sour cherries are most classically used in pies. And any kind of cherry can go into a pan-sauce for strongly flavored meats like lamb, pork, and duck.
