Today's pick: Brown butter, corn, and mushroom linguine ($17) at Buttermilk Channel.

This sunny plate of pasta is one of Buttermilk Channel's best dishes, more delicious in its way than even the restaurant's much-touted fried chicken. The chewy linguine comes from Caputo's, the old Italian shop down the street. It's sauced in a rich slurry of brown butter and corn milk, which pools at the bottom of the plate, where it's soaked up by feathery chanterelles. Sharp pecorino adds zip to the vegetables' sweetness.

This is the dish you will think of longingly when it's only light out for three hours a day, your boots are filled with slush, and you've entirely forgotten how the subway smells when it's a thousand degrees outside. You'll remember how utterly sweet and fresh summer corn tastes and be ready for August all over again.
