Torrisi Italian Specialties has applied itself to the egg-on-a-roll, the specialty of corner delis and Italian sub shops everywhere, and made it taste better than you ever imagined it could.
Smartly, they left the grease in the greasy-spoon special. The sandwich is a sloppy thing, the roll sopping up the egg-and-cheese drippings. Inside, delicately scrambled eggs, provolone, chunks of roasted red potatoes, and silken roasted red peppers squish together deliciously, generously seasoned with salt and black pepper.
It's a reinvention of sorts -- the sandwich made with the best available ingredients, the eggs cooked gently into a custard-like state, the roasted red peppers flavorful and juicy -- but one that preserves what everyone likes about the original.
