Even better smeared with maple syrup.
The Moment has a nice profile of the Farm Truck, the mobile outpost of Vermont's Holton Farms that has been roaming city streets since May. Despite some difficulty obtaining a mobile food license, the truck's owners have accrued more than 200 CSA members, and they want to expand their business to include a number of trucks that will fan out around the city (the truck currently has 22 drop-off locations, most of which are in Manhattan). And most alluringly, there's this: Truck operator Adam Foreman says that come winter, "we'd like to do a breakfast business, with flapjacks with maple syrup, waffles, oatmeal, Berkshire pork bacon, and our cage-free eggs." Here's hoping that mobile vending permit comes through soon.
