What's Your Favorite Cold Noodle Dish?
Brian H. asks: I'm a noodle fanatic. In winter I want my noodles super-hot, but in summer I don't like to wait for them to cool down. I'd love to know about some noodles that you love that are served cold.
Dear Brian: Glad you asked, this sweltering weather is getting to me, too. My summer favorite noodles are hiyashi chuka, a form of ramen served cold, and only during the warmer months of the year. There's usually little or no broth, just a hank of moist, cool noodles with a selection of excellent toppings painstakingly arranged on top, often including pickled ginger, sliced pork, sprouts, boiled egg, strips of ham, shredded omelet, and -- odd man out -- kernel corn.![]()
