South Asian goat curries can be found in infinite regional variations, some brothy and augmented with vegetables, others rich with cream and butter. But the Pakistani-style goat curry at Jackson Heights' Gourmet Sweets and Restaurant is of the dry sort that's all about the meat.
The teetering heap of flesh arrives at the table fragrant and scattered with bits of green chile, moistened only with its own flavorful drippings. Rubbed with spices and cooked on the bone for such a long time that the meat has gone limpid and utterly tender, it has the varied texture of the best pulled pork. Pluck up bites of the meat with bits of warm roti, and don't forget to suck the musky marrow out of the bones.
