Migas is one of the most beloved dishes in Tex-Mex cuisine, though it's rarely seen outside the state. Austin is the municipality most often associated with the dish, just as San Antonio is famous for its puffy tacos and Houston for its fajitas.
Migas is a scramble of eggs with cheese, pico de gallo, red or green hot sauce, shredded cheddar, and leftover tortillas, usually fried into chips. It makes the most mellow and satisfying breakfast, lunch, or brunch, and is served with additional tortillas or -- at famous Tex-Mex spot Cisco's -- with baking powder biscuits, showing the interconnection of Tex-Mex and Southern cuisine.
The General Greene makes a credible version, though it is a little low on the tortilla chips, perhaps as a result of carbophobism, and uses fresh green chiles rather than pico de gallo. With a side of bacon, it makes a damn fine meal.
