Man, if you like taro -- an easy-to-grow brown tuber cultivated in tropical climates around the world -- you'll love bot chien trieu chau. The taro sticks seen in the picture are soft and surprisingly light, like french fries, only creamier. The recipe involves miring them in a matrix of egg and rice flour, making a sort of cross between an omelet and a pancake. After cooking, the dish is strewn with fried shallots, providing crunch and extra flavor, and furnished with a bowl of a red-wine-vinegar dipping sauce.
Tu Do is a recently relocated Vietnamese restaurant in Manhattan's Chinatown, and it's one of the city's better Vietnamese restaurants.
