Of the newfangled dishes invented at Hill Country Chicken, best is the vegetarian Texas Hand Roll. Standing in the for the chicken patty in the flesh-bearing version is a generous portion of breaded and deep-fried avocado. There's some mayo coleslaw, too, and a sweet astringent relish, and -- illogical but delicious in this context -- sesame seeds, wrapped up in a flour tortilla. The thing is shaped like a sushi hand roll in its cheery paper cone.

There's a new outdoor seating area, and, calories notwithstanding, you should finish your meal off with a piece of margarita pie.
