Fedora Imports a Former Au Pied de Cochon Chef

With M. Wells, the meat, the bagels, and, now, the Fedora, New York is tasting more and more like Montreal these days. Florence Fabricant reports that Gabe Stulman has hired Medhi Brunet-Benkritly to helm the kitchen of his soon-to-open restaurant; Brunet-Benkritly was formerly the sous chef at Montreal's Au Pied de Cochon, where M. Wells' Hugue Dufour also worked as a sous. The Fedora is slated to open in November, just in time to for Brunet-Benkritly -- who also cooked at Montreal's Réservoir and Toqué! -- to start fattening us up for winter.
