Weather Up to Harvest Its Own Ice In-House

When it opens in November, Tribeca's Weather Up will take cocktail geekery to levels previously unseen here in the city: it will make and harvest its own ice.

The bar, which will be the younger sibling to the original, identically named bar Kathryn Weatherup opened in Prospect Heights in 2008, will employ a $6,000 Clinebell CB300X2 Carving Block Ice Maker. Diner's Journal reports that the machine will churn out 300-pound blocks of ice every three to four days using a slow-freezing cycle that mimics how ice freezes in lakes and prevents the formation of oxygen bubbles and striations.

The ice will be used for serving caviar and oysters and, of course, drinks. Whether or not Weather Up will be charging a buck per cube of their impeccably-sourced ice remains to be seen.
