Former Il Buco Owner to Open in Williamsburg

Following the lead of the Meatball Shop, Crif Dogs, La Esquina, Xi'an Famous Foods, Mole, and people under the age of five, the former owner of Il Buco is heading to Williamsburg.

The Brooklyn Paper reports that Alberto Avalle, one of the co-founders of the Bond Street restaurant, and Felipe Avalos are planning to open Pan Y Rosas, a restaurant-bakery-specialty foods complex at 291 Kent Avenue. They are promising "the best damn bread in New York" made from grains grown in New England and ground on the premises, as well as cured sausage from Vermont heritage pork and "the most fabulous Pecorino you'll ever eat."

The restaurant will be an 80-seat trattoria, with a roof deck, serving Spanish and Italian food. It's all scheduled to open in April, right around the time it gets warm enough for Kent Avenue residents to start venturing out of their luxury high-rises.
