Lievito's Unique Northern Italian Pizzas

This week, Counter Culture examines Lievito, a new pizzeria in the West Village where the pies reflect Northern Italian flavor preferences. The handsome tiled oven produces a range of pies -- many with no tomato sauce -- featuring fresh herbs, a mixture of cheeses, and a crust thinner and less charred than the Naples style that has dominated the city's pizza universe for the last few years. Indeed, Lievito's pizza are a unique product unto themselves, and there's nothing else like them in town.
The Carita, one of the white pies that are a specialty of the restaurant, topped with cheese, nuggets of pork sausage, mushrooms, leeks, and rosemary, making for an herby fragrance.![]()
