As other Chinatowns have grown and prospered, Mahattan's -- the city's first and most ancient, dating at least to the 1860s -- has sometimes seemed moribund. But in the last decade it has bounced back with superior Fujianese, in-the-vanguard handmade noodles, resurgent dim sum, and unsurpassed Hong Kong restaurants, with at least a dozen other regional cuisines represented in one form or another.
