What to Drink at Clover Club: A Remember the Maine

The bar: Clover Club, 210 Smith Street, Cobble Hill, 718-855-7939

The price: $12

The ingredients: Rye whiskey, sweet vermouth, Cherry Heering, and an absinthe rinse, served up in a rocks glass.

The buzz: It's no longer on the menu, but a Remember the Maine is my all-time favorite drink to order at Clover Club, and every bartender there knows how to execute it flawlessly. It's originally a Charles H. Baker recipe, published in his 1939 book The Gentleman's Companion. An oft-cited quote from the book that accompanied the recipe describes Baker's inspiration for including it: "REMEMBER the MAINE, a Hazy Memory of a Night in Havana during the Unpleasantnesses of 1933, when Each Swallow Was Punctuated with Bombs Going off on the Prado, or the Sound of 3″ Shells Being Fired at the Hotel NACIONAL, then Haven for Certain Anti-Revolutionary Officers." And, honestly, I'll be damned if you can't taste that mournful nostalgia in the glass.
