What to Drink at The Rum House: A Diego Rivera

The bar: The Rum House (228 West 47th Street, 212-869-3005)

The price: $12

The ingredients: Tequila, Meletti amaro, Bonal Gentiane, citrus, and egg whites, served on the rocks.

The buzz: Bitter is the new black when it comes to cocktails. Which makes this drink a conical-bustiered Jean Paul Gauthier cocktail dress. It's sharply bitter and dry, which will delight those who lost their sweet tooth along with their baby teeth. The citrus also makes it sour, essentially a puckered granny kiss of a drink, with just enough froth to keep things festive. It's the perfect no-nonsense drink for such a sensibly refurbished classic bar. Because when the piano music breaks out -- as it inevitably does at the Rum House -- you'll want something to sip as you tap your toes. Not fuel your urge to get up and dance on the bar.
