Ramp-O-Rama at Farmers' Markets This Weekend

They've been showing up in dribs and drabs for the last week, but ramps will be available in quantity at this weekend's farmers' markets. Count on at least three or four stalls to have substantial quantities at Union Square, including stalwarts Berried Treasures, from Cooks Falls, New York.

Ramps were available in limited quantity on Wednesday, and plenty remained at 2 in the afternoon.


The price of ramps has stabilized, and a small bunch will set you back $3. These plants are foraged in wetlands in the Catskills and elsewhere around the state. A recent article in the Times suggested that the weed may be over-foraged

After trimming the hairlike roots at the bottom of the stem, chop leaves and stem coarsely, then sauté them and incorporate into scrambled eggs, bruschetta, stews, salad dressings, or fried potatoes. But watch out -- it is indeed possible to get sick of ramps.

After a long winter, the Union Square Greenmarket is finally getting some spring vegetables in.

The first thick-stemmed asparagus are also now available -- this batch from a farm in far-southern New Jersey.
