900 Degrees Will Make Every Style of Pizza Imaginable

Well, at least they're thorough: 900 Degrees, a pizzeria serving Neapolitan, Roman, and New York-style pizza, will open on Seventh Avenue South next week.

Grub Street reports that the restaurant is the work of Bruno DiFabio and Tony Gemignani, the owners of Tony's Pizza Napoletana in San Francisco. Its name refers to the temperature at which the Neapolitan pies will be cooked; the New York-style pies will get a comparatively chilly 550 degrees Fahrenheit.

Gemignani comes with suitably impressive pizza credentials: In 2007, he became the first American to win Naples' Best Neapolitan Pizza in the World Cup. His trusted apprentice chef, Audrey Sherman, will head the kitchen here, and deal with the inevitable nitpicky reviews from our vocal population of pizza obsessives.
