Beecher's Opened Today, Curd Nerds in Heaven

Today marked the New York City opening of Beecher's, the Seattle-based cheese shop, which took over more than 8,000 square feet of space just north of Union Square. A veritable cheese mecca? Obviously we had to scope out the scene.
The space is vast, with the subterranean level dedicated to drinking and dining after 5 p.m. Available on the main level is a wide selection of American cheeses and charcuterie. At 1 p.m., the store was bustling with shoppers.

The highlight of the shop, however, is the glassed-in area where the cheese making takes place. Peer through the glass and watch the magic happen.
