Jason Denton Loses His Panini and Daniel Humm Dons a Hard Hat

The week before July Fourth is usually a slow one for big restaurant developments, but today has brought us a couple of exceptions.

Back in January, Jason Denton officially announced his plans to expand his dining empire to Williamsburg with an "Italian-spirited" restaurant. According to Grub Street, his plans will come to fruition next week with the opening of Betto, a 60-seat spot that will be notably panini-free. Unlike 'ino and 'inoteca, Betto will traffic in bruschette, as well as small and large plates. All will be the work of Shaunna Sargent, the chef at Corsino.

Back in Manhattan, The Feast gained access to the NoMad Hotel, where Eleven Madison Park's Daniel Humm and Will Guidara will be in charge of food and beverage operations. Quoth The Feast, it will comprise "a dining room, atrium, bar, library, and semi-private fireplace area," with seating for approximately 130. The atrium will be enclosed by a Louvre-like glass pyramid, the feel will be casual, and the Rolling Stones will be guiding muses of sorts, thanks to the studied intention behind their chaotic music. Or something.
