Jessica Wilson Is Now the Executive Chef at Goat Town

Goat Town has gone and gotten itself a new chef.

Reps for Nicholas Morgenstern's East Village restaurant write in with the news that Jessica Wilson has been named its new executive chef. Wilson, who replaces Joel Hough, was most recently the sous chef at A Voce, and has served as a sous chef at Prune.

Per the release, Wilson is introducing a "distinctly feminine point of view" to the Goat Town menu. We have no idea what on earth this means, exactly, unless she's planning to serve everything with estrogen foams and Jennifer Weiner paperbacks, but feminine or not, Wilson's sample dishes, which you can see below, look pretty good.


--Fried honeycomb tripe with candied lemon rind and verbena

--Eggs and roe with goat butter and wild hackleback roe

--Pan-roasted halibut with golden beets, hen of the woods mushrooms, chive blooms, and horseradish

--Crispy pork belly with polenta, tomatillo-jalapeño, and apple salsa

--Pasture-raised beef burger with marrow butter

--Seltzer batter smelts with fiddlehead ferns, jalapeños, and sorrel

--Cold-poached fennel bulbs with anchovy vinaigrette and baked bread crumbs

--Seared smoked pork jowl and blackberry jus with hazelnuts and sweetbreads

--Grilled quail with rhubarb, spring onion, and mustard

--Seared day-boat scallops braised with baby leeks, celery, and vanilla bean
