Greenmarket Vendors Can Once Again Cut the Cheese

Fans of both cheese and reason can breathe a sigh of relief: The state Department of Agriculture and Market is once again letting Greenmarket vendors cut their cheese.

The Daily News reports that the ag department decided to reverse its recent decision to enforce an archaic regulation prohibiting vendors from slicing cheese unless they had a food-processing license -- which could only be obtained by vendors in possession of a "permanent" building with a three-compartment sink. Vendors do still have to wear hats and gloves, and keep their knives clean and cheese in display cases -- all of which the vast majority of them were doing in the first place, without the aid of a "permanent" building.
