Greenmarket Vendors Can Once Again Cut the Cheese
Fans of both cheese and reason can breathe a sigh of relief: The state Department of Agriculture and Market is once again letting Greenmarket vendors cut their cheese.![]()

The Daily News reports that the ag department decided to reverse its recent decision to enforce an archaic regulation prohibiting vendors from slicing cheese unless they had a food-processing license -- which could only be obtained by vendors in possession of a "permanent" building with a three-compartment sink. Vendors do still have to wear hats and gloves, and keep their knives clean and cheese in display cases -- all of which the vast majority of them were doing in the first place, without the aid of a "permanent" building.
