What Should I Do with This Lamb Head?

At a family reunion in the Catskills this weekend, my fabulous relatives picked this tasty lamb clean, but left the head and neck intact. Naturally, I brought it home. While my future now looks considerably brighter, I'm honestly not sure exactly what to do with it. After all, it's far too hot for soup.

Should I make a little sandwich for lunch with mayonnaise and lettuce, or pot the meat with some rendered fat? Maybe I'll lazily put it in the freezer for now, to surprise anyone looking for ice cubes. If you have a favorite snack to make with a leftover head, do let me know.
