Rarely have the earthy, spicy, and complex flavors of southern Mexican been so forcefully presented on a plate. The massive lamb shank served at Long Island City newcomer Casa Enrique is itself full of strong, meaty flavors. Is it really mutton?

The shank arrives long-braised in a huaxmole containing dried red pulla chiles, fresh epazote, and huaje seeds. Served with yellow rice, black beans, and warm tortillas, it's easily enough food for two people and delicious.
