Liang Pi "cold skin noodles," $4.50
This vegetarian dish at Xi'an Famous Foods has become something of a classic, but it's as cheap and fine as ever. The muddle of fat, bouncy wheat noodles, soft gluten, crunchy cucumbers and sprouts, all swimming in a tongue-tingling chile oil, makes for a fantastic lunch on a hot day. Especially if it's paired with a simple herb salad.
