Thailand's Center Point specializes in the cuisine of Isan (or Esarn), the country's northeastern region, where Laotian-style sausages can be fatty, aromatic wonders.

This version is wonderfully sweet and junky, tasting of lemongrass, chiles, and fish sauce. It's fried for a crisp skin, then split down the middle and served with fresh lime, thin slices of raw ginger and onion, roasted peanuts, and more fresh Thai chiles. With a cold beer, it's just the thing to kick off a great meal, but you'll have to remember to BYO.
