Bone marrow tacos, $12, Dish #44
Chef Matthew Hamilton used to run the kitchen at Belcourt (the cute East Village bistro replaced earlier this year by Calliope). He served a fine dish of bone marrow tacos there -- hot marrow on warm tortillas -- and fans will be glad to know Hamilton is cooking it again, this time at his own restaurant. Lulu & Po is a tiny, charming spot in Fort Greene named for the chef's wife and daughter.
The roasted marrow bones are served with a sharp herb salad dotted with capers and pickled shallots, and arrive with a bottle of house-made hot sauce. The dish lacks the satisfying crunch of grilled bread, marrow's usual partner, but it's a fun way to clean a bone.
