Kale salad with eggs, $15
The raw kale at Northern Spy maintains its serious fan base. Here's why: Tender frills of kale are rubbed down with lemon and olive oil, tossed with broken, toasted almonds, roasted squash, and tiny crumbles of cheddar. Topped with a sprinkling of Pecorino, it's an elegant, spare composition that comes together best at lunchtime, when you can add on two eggs with crisp edges. The soft yolks run into the leaves and lend the greens just a touch of fatty opulence. It's a wonderful way to start the day.
